If you are looking for classic British cuisine, served with professional flair in a clubby atmosphere, you have to make reservations at Wilton's.
Many years ago on a business trip I had lunch here, and it was such a memorable meal that I made a point to come back and have the full dinner experience. It paid off to wait so long.
A cordial welcome at reception, where we checked both our coats and shopping bags in a coat check that had ample room and a reassuring sense of security.
We were escorted all the way into the inner precincts where a corner booth with a generous size round table awaited us, from where we could scout the entire place and the outstanding wall art collection, while maintaining enough distance from neighboring tables.
1.We started with half a dozen fresh oysters, with such distinct herbal and blue cheese notes that we thought they had been smoked. So different from the ones we are used to have in the Northeast USA, and a welcome addition to our oyster repertoire.
2. We transitioned into a classic endive, walnuts, pear and Stilton salad, and being a Stilton fan, I had to have the twice baked Stilton soufflé. Perfect size and texture and a creamy, aromatic sauce surrounding it.
3. I could not resist ordering the roast pheasant a l'anglaise, knowing perfectly well that it was going to be gamey and dry, but it surpassed all my expectations.On the side silky truffled mash potaotes. My companion was pleased with her perfectly grilled Cornish sea bass with crab sauce, mashed potatoes and celeriac purée.
4.To finish a perfect meal we shared the apple crumble.
The service was flawless, reserved and accommodating. We were in cloud nine throughout. And we are already looking forward to go back next year.
